The sweet-sour sparkling taste reminds of young and sweet new wine or bitter lemon, depending on how you flavour it. You won’t find fresh and untreated Water Kefir in stores. As it is so easily made by yourself, you may want to make it yourself. All you need is a starter culture. Wich you can easily order online. Look for organic Water Kefir starter-kit with Japan Crystals.
And here is how you make it.
1 liter water.
5 tablespoons sugar
2-3 tablespoons Japanese Crystals
Some dried fruits and optional a slice of organic lemon.
Put the water in a big jar and add sugar.
Add the Crystals and dried fruits and optional a slice of organic citrus fruit.
Dates, Raisins, Figs work great!
One date for one liter is usually enough.
Cover the glass with a tablecloth and let it sit for 2-4 days at room temperature.
Strain Crystals through a plastic strainer, and fill ready made Water Kefir in bottles. And start process from the beginning. You will see your crystals will grow with every new batch. Give some of it in sugary liquid to your friends, so they can try their own!
If you want to have it sparkly, put your water kefir in bottles and flavour it one more time with dried fruits and optional spices like ginger, cinnamon, Lemongrass. Close the bottle and let it sit another day or two at room temperature.
Water Kefir can be fermented with all kinds of dried fruits, citrus fruits,healthy herbs and spices such as ginger or cinnamon. Experiment with flavouring, your Water Kefir will appreciate it!
While I am in the tropics I use coconut water instead of normal water for my fermentation.

Cover the glass with a tablecloth and let it sit for 2-4 Days at room temperature.
Strain Crystals through a plastic strainer and put your ready made Coconut Probiotic in Bottles.
For flavouring and colouring add one slice of dried dragonfruit.
Close the bottle and let it sit for another day at room temperature.
Here I use raw sugar, that is light in colour. Because I want to make it pink with dragonfruit in the second fermentation.
After using Coconut water I always use normal water and a mix of white and brown sugar and dried fruits for one batch to feed the crystals with its favourite.
